Three follow-up winners each received a $25 VISA/Beef Buck debit card and a set of BEEF RECIPE COLLECTIONS – Clinton Harris (Warren, MI), Sue Alverson (Wentworth, SD) and Amy Henderson (Mitchell, SD).

EYE OF THE ROUND KABOBS – Marilyn Kokesh (Scotland, SD)
Season eye of the round steaks (2) with blackened steak magic, ground sea salt, cracked ground
pepper and a little bit of garlic powder. Cube meat and place on skewers; alternating with whole
mushrooms,pearl onions, red, yellow, orange and green peppers along with green young zucchini –
cleaned and cut into chunks. You can also add broccoli, cauliflower-ettes or small red potatoes;
let your imagination be your guide. Place skewers on the grill, close the lid, and turn often.
Spray with water often once the meat is braised-brown some so that the vegetables do not dry out.
Time is a factor when home from work, so this is done in less than 30 minutes.
SUPER GRILLED BEEF SANDWICH – Clinton Harris (Warren, MI)
Grill ground chuck that has been formed into patties; flavoring with kosher salt and cracked
pepper. Place on bun with gruyere cheese, smoked bacon slices, sliced red onion, lettuce, tomato,
homemade spicy mustard and ketchup.
FANTASTIC FAJITAS – Sue Alverson (Wentworth, SD)
1 lb. lean round steak (can use skirt steak)
2 cloves minced garlic
1 tsp. oregano
1/2 tsp. cumin
1 tsp. seasoning salt
2 T. orange juice
2 T. vinegar
dash of hot pepper sauce
1 med. onion peeled and sliced
1/2 sliced green pepper
1/2 sliced red pepper
4 flour tortillas
Slice beef across grain into 1/4 inch strips. Marinate in garlic, oregano, cumin,
salt, orange juice, vinegar, and hot pepper sauce for 10 minutes. Put non-stick aluminum foil
on hot grill. Put beef strips on and cook until almost done; add onion and pepper strips. Grill
until done turning frequently. Serve on flour tortillas and add lettuce and salsa. Enjoy!
MARINADE FOR BEEF – Amy Henderson (Mitchell, SD)
1 c. vegetable oil
1/2 c. soy sauce
1/3 c. red wine vinegar
1/4 c. lemon juice
3 Tbsp. Worcestershire sauce
1 Tbsp. black pepper
2 Tbsp. Dijon mustard
2 Tbsp. minced onion
2 cloves garlic, minced
Combine all ingredients and use to marinate your favorite cut of beef. Grill & Enjoy!
